Avocado is always good! It’s such a great and delicious part of any balanced diet, and, of course, it’s a huge part of a vegan diet. It gives us a healthy type of fat that vegans really need. But, have you ever used avocado to make a sweet dish?? This avocado lime cheesecake is proof that you can easily create a sweet dish with avocado (that is also healthy)!!!
Avocados are good for Buddha bowls and for Mexican-style dishes, such as tacos, quesadillas, and tortillas. I also use avocados to make sandwiches, toasts, hummus or pesto.

Avocados are healthy
Avocados are such delicious, nutrient-dense food. It says that it contains about 20 important vitamins and minerals that are necessary for a healthy diet.
If you are one of those vegans who wish to shed some extra weight, avocados become your best friend! It might sound weird and suspicious at first but you want to eat some ‘healthy’ fat! And avocados, together with nuts, are the best source of healthy fats! Just half of a small avocado will help you lose weight quite easily.
There has been researching conducted on the health benefits of eating avocados. Eating avocados strengthens heart health, helps prevent osteoporosis, and has a positive effect on digestion.
It’s been said that avocados are one of the best foods to eat during pregnancy. Why? Because avocados are packed with folate which is extremely important for a healthy pregnancy and the development of a baby. Apart from folate, avocados also contain potassium and vitamin B6 that is proved to help with morning sickness.
Avocados are such powerful food that they may help prevent oral cancer. Nutritions that are present in avocados are strong enough to kill malignant cells and thwart those cells from developing into cancer. That is a pretty strong reason to eat avocados, don’t you think so?
Avocado cheesecake preparation
To make this avocado and lime cheesecake, you will need many (around 5) ripe avocados. I suggest making this cheesecake when avocados are in season in a place where you live. That’s how you save some money on avocados.
You will need 2 limes – their zest and juice. The fresher, the better! To make this cheesecake thick, you will need agar-agar powder. Agar-agar powder has exactly the same properties as gelatine powder but it’s totally vegan and gluten-free!
To make a cheesecake crust, you need desiccated coconut, almond meal, Medjool dates (dried), chia seeds, and coconut oil (melted).
For the cheesecake part, you will need limes, avocados, pure maple syrup, and vanilla essence (extract).
This avocado lime cheesecake is:
- sweet
- sour
- zesty
- soft
- mild
- easy
- big enough for 10-12 people
Avocado Lime Cheesecake (Vegan, Gluten-free, Refined sugar-free)
Equipment
- Food Processor or Blender
- Cheesecake tin (I used a size of 23 cm)
Ingredients
For base:
- 1 cup dessicated coconut
- 1 cup almond meal
- 2 tbsp chia seeds
- 1 cup Medjool dates dried, pitted
- 1/4 cup coconul oil melted
For cheesecake:
- 5 large ripe avocados pitted
- 2 large limes
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp agar-agar powder
- fresh berries to serve
Instructions
- Start making the crust. Add all the ingredients to a blender or a food procesor and blend until you get a crumbling dough that holds together.
- Transfer the dough to the cheesecake tin and press it to the bottom. Set in a fridge.
- Now make cheesecake. Grate and juice your limes. Add their zest and juice to a blender or a food processor. Add the rest of ingredients except agar-agar powder. Blend everything until very smooth.
- Transfer the avocado dough to a saucepan. In another pan, mic agar-agar powder with 3 tbsp boiling water until the agar-agar powder is completely dissolved. Pour agar-agar water into your avocado mixture and stir it.
- Transfer the avocado dough on the top of the crust in the cheesecake tin.
- Set in a fridge for at least 1 hour until the cheesecake fully thickens.
- Decorate with fresh berries. Enjoy!
