Avocado is surely one of the best foods in the world! It is probably the healthiest and the most nutrient-dense food I know. Avocados are amazing in many vegan dishes but… Have you tried avocado cauliflower rice yet? So incredibly easy to make and so good!
Avocados are indeed the most convenient food in the world. Are you hungry late at night? Fix yourself a quick avocado toast. Feeling Mexican today? Mash avocados in guacamole and dip those tortilla chips! Easy as it is!
Avocados contain plenty of ‘healthy’ fats that are really good for you. This is particularly handy if you try to lose a few kilos. Healthy fats supply most of your energy for a day. That means, you don’t have to look for another, unhealthy source of (processed) sugar to give you energy!
Another great thing is that avocados contain other nutrients such as vitamin B, E, C, K, magnesium, potassium, lutein, folate… As I said, avocado is one of the most nutrient-dense foods in the world!
You probably think that avocados taste best in Mexican dishes. That’s true but there are other dishes, even sweet dishes that avocado makes taste even better! Try this delicious Avocado Lime Cheesecake for example!
You can use avocados to prepare easy pasta sauce, like in this Easy Avocado Pesto Pasta. Avocados can be also used to assemble a quick and simple sandwich or toast, such as Vegan ‘Tuna’ Salad or Avocado Toast With Grilled Tomatoes, or even burgers, like this Sweet Peanut Butter Jackfruit Burger.
If you visited my blog before, you might remember this delicious Cauliflower Rice With SautƩed mushrooms. It was such a success that I decided to create another recipe using cauliflower rice. This time, using mashed avocados.
What do you need to make this avocado cauliflower rice? Just a few ingredients:
- cauliflower, preferably one medium head. To make cauliflower rice, you need either a food processor or a grater.
- 2 large avocados. Remember to use ripe avocados.
- 4 garlic cloves. You can also use garlic paste, about 2 tablespoons
- jalapenos. I used 1/4 cup but if you feel this would be too hot, then you can use less or omit at all
- chilli flakes. You can omit chilli flakes if you prefer your avocado cauliflower rice milder.
- Fresh coriander leaves
Avocado Cauliflower Rice

- Food Processor
Ingredients
- 1 medium head of cauliflower
- 1 tbsp olive oil
- 1 medium onion diced
- 4 cloves garlic 1) minced
- 2 ripe avocados mashed
- 1/4 cup lime juice
- 1/4 cup jalapenos diced
- 1/4 tsp chili flakes
- 1 cup fresh coriander leaves chopped
- Salt, pepper
Instructions
- Make cauliflower rice: Place cauliflower in a food processor and process until cauliflower crumbles and resembles rice. As another option, grate your cauliflower roughly, using a grater. Set aside.
- Heat olive oil in a frying pan and add onion and garlic. SauteƩ for 2 minutes. Add cauliflower rice and cook for another 5 minutes over a medium heat.
- Meanwhile, mash avocados with a fork in a bowl. Add lime juice, coriander, chilli flakes, and jalapenos. Mix and taste. Add salt and/or pepper according to your liking.
- Remove the cauliflower rice from a heat and stir into mashed avocados mixture. Taste and add more salt and/or pepper.
- Serve as an appetizer, main dish or a dip for tortilla chips.
