5-Minute Spicy Avocado Hummus
Ingredients
For hummus:
- 1 avocado medium, peeled and pitted
- 1 cup canned chickpeas rinsed and drained
- 1 tbsp tahini
- 2 1/2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup fresh coriander leaves
- 1/2 cup spinach leaves
- 2 tbsp olive oil
- 1/2 – 1 tsp cayenne pepper/ground chilli
- 1 tbsp gluten-free maple syrup optional
To serve:
- 8 slices gluten-free wholegrain bread
- pine nuts to garnish
Instructions
- In a food processor, blend together all the ingredients for hummus.
- If the hummus seems to be too thick, add a little bit of water.
- Spread over the slices of bread. Garnish with a few pine nutes.
- If the hummus is too bitter (beacuse of a strong nutty tahini flavour), add 1 tbsp gluten-free maple syrup.
- Enjoy!
